The second I believed olive oil’s citrus, peppery, grassy flavor profile didn’t work perfectly with a dish, I would pick another fat. Why does this matter? Well, extra virgin olive oil is widely considered the most nutritious, healthy fat. [with avocado oil in a close second but much more expensive] If it could be used, it makes sense to use it in your everyday cooking. I think buying an extra virgin olive oil that is less expensive to cook with and a nicer bottle to finish dishes with makes sense. Try olive oil in an unexpected place and see what you think.
