hard cheese crumble

 

For many years when I thought about using any hard cheeses like parmesan or pecorino I reached for the grater. Then came the vegetable peeler to make beautifully thin shaved pieces perfect for salads. The most recent discovery, the hard cheese crumble. 

The benefit of the crumble is all in the contrast. Imagine a big bowl of pasta. Grating the cheese provides an even distribution of flavor around the bowl. Crumble chucks do the opposite; one bit with and then one bite without. Next time you grab the grater or peeler, consider if crumbles are the better or more interesting option.
