simple simple syrup

Heating up water to make simple syrup is not necessary and can lead to less than accurate results due to evaporation. The simplest way is to add equal parts water and sugar into a bowl and wait. Yep, the sugar will dissolve in about an hour. 200 grams of sugar and 200 grams of water will get you about 11 oz of syrup. If you're in a rush add it to the blender to dissolve the sugar in seconds. [easier and faster than waiting for hot syrup to cool]

So you don't have a scale? Measure one cup of sugar and one cup of water but remove 2 ½ tbsp of the water. Here's the math, one cup of water weighs 236 grams, one cup of sugar weighs 198 grams, and one tbsp of water weighs about 15 grams. 236-198 = 38 grams of too much water; 38 grams/15 grams in a tbsp = 2 ½ tbsp of too much water.
